Pocket count is the decision
A bottle crate is defined by its pocket layout — 6, 12 or 24 — and the pocket has to match the bottle. Too loose and bottles rattle and chip; too tight and they jam on the way out. Pocket count also sets how the crate handles: a full 24-pocket crate of glass is a serious weight.
Dividers do more than separate. They carry load down to the base rather than through the bottles below, which is what lets loaded crates stack without the bottom layer taking the weight of the stack.
